Ingredients
4 boneless, skinless chicken breasts (about 1 1/2 pounds)
Salt and pepper, to taste
1/4 cup all-purpose flour
2 tablespoons olive oil
1/4 cup chicken broth
1/4 cup white wine (or more chicken broth)
4 cloves garlic, minced
2 tablespoons fresh thyme leaves (or 2 teaspoons dried thyme)
Juice of 1 lemon (about 2 tablespoons)
2 tablespoons butter
Directions
Season the chicken breasts with salt and pepper on both sides. Place the flour in a shallow dish and dredge the chicken in it, shaking off any excess.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 15 minutes, turning once, until golden and cooked through. Transfer the chicken to a plate and keep warm.
In the same skillet, add the chicken broth, wine, garlic, and thyme. Bring to a boil and scrape up any browned bits from the bottom of the pan. Reduce the heat and simmer until slightly thickened, about 10 minutes.
Stir in the lemon juice and butter and season with salt and pepper to taste. Spoon the sauce over the chicken and serve with your favorite side dish.
